I wanted to understand how much work it would take to process a pig in the event I bought one. As a bit of a foodie, I’m curious to make my own sausage, and try cooking some bits of the pig that are harder to get or more questionable. Finally, it should come as no surprise that I’m concerned about the long-term sustainability and health of our industrialized food supplies.
The butchering is, of course, a somber but determined moment and the hard work required to make the turkey ready for the kitchen was made delightful by the assembled group. It was one of the most “neighborly” experiences I’ve ever had.
So what? Are you going to eat out of garbage cans? must be a joke that forager Wildman Steve Brill hears all the time because it was a joke more than one of my friends made when I told them about my foraging tour of Central Park.
Why not rehabilitate one of the many dreary and dying communities that dot the Southern landscape…it might be a way to re-energize and educate the community around it in a way that Earthaven never will. We left Earthaven and spent most of the day arguing about it. That’s fine.
